Szechuan/ Sichuan Pepper, finely ground
The outer husk of the zanthoxylim piperitum berries are ground down to make this piquant, but not super hot flavouring. This 'pepper' creates a slightly numbing effect on the tongue and has a lemony tart flavour. Szechuan Pepper is used as ingredient in some blends of Chinese 5 Spice.
This spice is often used to make the sweet and lightly spicy sauce known as Szechuan style, which also uses garlic and root ginger. Szechuan sauce lends itself well to pork, chicken and prawns.
