Fructose is a naturally-occurring sugar obtained primarily from fruit, but also found in vegetables and cereals. It is naturally occurring, and is sweet. Fructose is used as an alternative to standard table sugar (sucrose). It is sweeter than ordinary sugar for the same number of calories; therefore, you can use less fructose than sucrose and thus consume fewer calories.
Fructose has a low glycemic index compared to normal sugar. Typically, fructose has a glycemic index of around 19, whereas sucrose has a glycemic index of around 68. This makes it popular amongst diabetics and those who are on a diet, because it causes blood sugar levels to rise far more slowly.
How much fructose is used depends on what you are using it for. For tea and coffee, you would typically use just over half a teaspoon of fructose for every teaspoon of normal sugar. For baking, it is recommended that you use one-third less fructose than you would normal sugar, and that you bake at a slightly lower temperature, and for slightly longer.
