Buckwheat is a pseudo cereal (which is like a small seed) and has no relation to wheat. It is a versatile grain, and the flour it produces is particularly good for making pancakes and scones, breads and even noodles if you are feeling adventurous.
Buckwheat flour can be used as an alternative to wheat flour. Because it does not contain gluten, you may like to add "binding" ingredients such as egg or xanthan gum. You can also mix buckwheat with other flours such as potato flour.
Buckwheat flour can be used to make excellent wheat-free pancakes. Simply make a batter using buckwheat flour, egg, milk and a pinch of salt. Leave the batter to stand in a refrigerator for 15-20 minutes, then spoon a small amount into a small lightly greased non-stick pan and fry.
