Pinhead (or steel-cut) oatmeal is simply coarsely-chopped oats. They are whole oats, cut with a blade (made of steel), rather than ground using stones. It can be used in a variety of recipes, both sweet and sour, including porridge, flapjacks, coarse biscuits and vegetarian burgers.
