Mixed Root Vegetable Crisps with Rosemary & Wild Garlic

These mixed vegetable crisps are seasoned with rosemary and wild garlic after a gentle fry in sunflower oil. The beetroot, parsnip and carrot are crinkle cut and make an interesting alternative to normal potato crisps.
Each vegetable has a subtly different flavour, which is complimented by the seasoning. Anyone who enjoys caramelised roasted veg with their Sunday roast will enjoy these. And the good news is that due to the nature of these three vegetables you will find that they contain more fibre than the equivalent amount of potato-based crisps!
