Teff grains are tiny seeds from the grass Eragrostis tef mostly grown in Ethiopia. The grain is less than 1mm in diameter and contains a range of useful dietary nutrients including B Vitamins, Vitamin C and Calcium.
Teff flour makes a nutritious base for pancakes or wraps. It can be used in place of traditional plain flour in biscuits and can be combined with brown rice flour to make cakes and muffins. Brown Teff Flour makes a tasty loaf or tea bread.
White and brown teff are available; these differ in taste (with the white teff having a lighter taste). They are very similar nutritionally.
