Hardly any spice enchants us more than the almond-shaped seed of the tonka tree. The essential oils
of the tonka beans exude a scent of almonds, vanilla, amaretto, woodruff and fresh hay and bewitch
our senses. The spice is said to have an erotic and even hypnotic effect due to its high coumarin
content. Tonka bean is often used as a vanilla substitute. Due to its very special character with a fine
and bitter note, the Tonka Bean should not be reduced to sweet dishes only. Depending on the use, it is recommended for milk-based desserts to boil the beans in milk for a few minutes or to rub a little with a nutmeg grater.
Our Tonka beans come from pure wild collection which has been certified organic in
advance.
The daily tolerable intake is given by the Federal Institute for Risk Assessment (BfR) as 0.1 milligrams
per kilogram of body weight. However, the coumarin content of the tonka bean does not pose a risk
when used sparingly.
